Make Instant Pot chicken detox soup for a healthy chicken soup bursting with veggies like carrots, onions, celery, broccoli, and peas, in a warm, nourishing broth with plenty of flavor.
Without fail, when the new year comes, I’m craving something warm, comforting, and healthy.
My family has grown to love Red Lentil Soup and Pork and Potato Soup, but sometimes you want something different…yet the same.
Still warm, comforting, and filling, but with a different flavor and different ingredients.
This Instant Pot chicken detox soup is exactly that – it’s the classic flavors of the chicken soup you had growing up but with a few grown-up spices thrown in.
The result is a delicious, filling, and healthy chicken soup that’s easy on the budget!
INSTANT POT CHICKEN DETOX SOUP
This healthy chicken detox soup is:
- Allergy-friendly. Both gluten-free and dairy-free.
- Crazy simple. Dump it all in the Instant Pot and hit go.
- Ready really quickly. Thanks to the Instant Pot, dinner is ready in under 30 minutes.
- Freezer-friendly. I always make extra leftovers to INTENTIONALLY put some up in the freezer.
- Kid-friendly. The spices are so mild, that no picky eater will be turned off.
- Easily adaptable. I like to make this soup as I wrote it below, but feel free to swap some of the vegetables around based on the season or what you have in the fridge.
This is one of my favorite soups to make early in the day and set the timer to cook around 4 pm. When we’re home at 5 pm, there are just 5 minutes to shred the chicken, and dinner is done!
WHAT IS DETOX SOUP?
A detox soup is usually a broth-based soup loaded with nutritious vegetables full of fiber and protein. We have all that, PLUS we have extra ingredients that give you a health boost and tons of flavor!
Generally, a detox soup or a soup cleanse is to give your body a break and a chance to reset while providing plenty of nourishment from simple real foods.
I’m calling this soup Instant Pot Chicken DETOX soup because some of the ingredients have specific health benefits:
Plus, there are plenty of vegetables and Homemade Chicken Stock, and we know that’s exactly what mom would make when we weren’t feeling the best!
HEALTHY CHICKEN SOUP RECIPE INGREDIENTS
This healthy chicken soup recipe may seem like it has a long list of ingredients, but I promise that it’s nothing you haven’t seen before:
- Core Vegetables: onion, celery, carrots
- Bonus Vegetables: peas, broccoli
- Chicken. You can cook chicken breast or boneless chicken thighs directly in the soup or add 2 cups of cooked shredded chicken at the end with the broccoli.
- Apple Cider Vinegar. You can make your own using apple peels and cores.
- Chicken Stock. I always have Homemade Chicken Stock in the freezer. Boxed chicken broth or vegetable broth is a good substitute if that’s what you have.
- Seasonings: ginger, turmeric, crushed red pepper, Italian seasoning
If you have them, fresh herbs like parsley, basil, or cilantro are a great finishing touch for this detox soup recipe, or squeeze a bit of fresh lemon juice over your bowl for a burst of brightness.
Psst! Want to boost the savory flavor of this soup? Try finishing this recipe with a pinch of finishing salt! I love Ava Jane’s Kitchen because it doesn’t have microplastics (gross, right? and also pretty important if you’re trying to detox) and it’s SO GOOD! Plus, you can get a free 8oz. bag of sea salt (just pay shipping and handling!)
HOW TO MAKE HEALTHY SOUP WITH CHICKEN
Follow these instructions for this easy detox healthy soup with chicken.
Step 1. Combine all the ingredients (except broccoli) in the Instant Pot.
Step 2. Cook on high pressure for 10 minutes and let the pressure release naturally for 10 minutes.
Step 3. Release the rest of the pressure and remove the chicken breasts to a plate. Toss in the broccoli and put the lid back on – the residual heat will cook the broccoli.
Step 4. Meanwhile, shred the cooked chicken using two forks, then stir it back into the soup, and serve warm.
Store leftover detox soups in an airtight container in the refrigerator for up to 5 days.
